Ingredients

The meatballs and sauce

  • 12 pieces cooked vegetarian meatballs
  • 24 ounce jar traditional pasta sauce

The rolls and toppings

  • 4 pieces whole wheat sub rolls
  • ½ cup shredded mozzarella
  • ¼ cup unsalted butter
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • to taste chopped parsley for topping

Instructions

  1. Preheat the oven to 350°F.
  2. Melt butter, garlic powder, and salt in a microwave-safe dish or on the stove.
  3. Brush the melted butter on the inside of the sub rolls.
  4. Toast the sub rolls in the oven for 3-4 minutes until golden.
  5. Meanwhile, warm the pasta sauce and cooked meatballs in a saucepan.
  6. Assemble the subs by adding 3 meatballs to each toasted sub roll.
  7. Drizzle with ¼ to ½ cup of pasta sauce and sprinkle with shredded mozzarella.
  8. Bake the assembled subs in the oven for 5 minutes until the cheese is melted.
  9. Top with chopped parsley before serving.
