Ingredients

The ice cream base

  • ¾ cup Unsweetened almond milk
  • ½ cup Heavy cream
  • ¼ cup Besti Monk Fruit Allulose Blend
  • 1 tsp Vanilla extract

The chocolate coating

  • 8 oz Sugar-free dark chocolate chips
  • 1 ½ tbsp Coconut oil

Instructions

  1. Whisk together the almond milk, heavy cream, sweetener, and vanilla extract in a medium bowl.
  2. Add popsicle sticks to silicone molds and pour the almond milk mixture into the molds.
  3. Freeze the molds for at least 8 hours until solid.
  4. Remove the frozen bars from the molds and place them on a parchment-lined baking sheet.
  5. Melt the dark chocolate chips and coconut oil together in a bowl and let them cool to room temperature.
  6. Dip each ice cream bar into the chocolate mixture, using a spoon to help coat them if needed.
  7. Immediately return the coated bars to the freezer after dipping.
