Instructions
- Whisk together the almond milk, heavy cream, sweetener, and vanilla extract in a medium bowl.
- Add popsicle sticks to silicone molds and pour the almond milk mixture into the molds.
- Freeze the molds for at least 8 hours until solid.
- Remove the frozen bars from the molds and place them on a parchment-lined baking sheet.
- Melt the dark chocolate chips and coconut oil together in a bowl and let them cool to room temperature.
- Dip each ice cream bar into the chocolate mixture, using a spoon to help coat them if needed.
- Immediately return the coated bars to the freezer after dipping.
