Ingredients

The Brownie Base

  • 1 cup almond flour
  • ½ cup cocoa powder
  • 1 cup allulose
  • 2 tablespoons allulose
  • 1 teaspoon baking powder
  • ¾ cup butter
  • 3 tablespoons butter
  • ¼ cup keto chocolate chips
  • 2 tablespoons keto chocolate chips
  • 5 large eggs
  • 1 tablespoon vanilla extract

The Ice Cream Filling

  • 2 pints keto ice cream

Instructions

  1. Line two 9-inch square pans with parchment paper.
  2. In a large bowl, mix the dry brownie ingredients. In another bowl, melt the butter and chocolate, then combine with eggs and vanilla.
  3. Combine the wet and dry ingredients and spread the batter in the lined pans, pressing down with parchment paper.
  4. Bake the brownies for 12-14 minutes and let them cool for 10 minutes.
  5. Soften the ice cream, scoop it onto one brownie layer, and add the second brownie layer on top.
  6. Freeze until solid, then slice into 9 bars.
