Instructions
- Preheat the oven to 350°F and grease and flour a loaf pan.
- In a large mixing bowl, combine the banana, eggs, Greek yogurt, honey, melted coconut oil, orange juice, vanilla extract, and orange zest, then mash and whisk until well combined.
- In a separate bowl, mix the flour, corn starch, cinnamon, baking powder, baking soda, and salt until fully combined.
- Add the dry ingredients to the wet ingredients and mix gently with a rubber spatula until combined, then carefully fold in the raspberries.
- Transfer the batter to the prepared loaf pan and spread evenly.
- Bake for 60 minutes or until the top is brown and a toothpick comes out clean.
- Let the bread cool on a rack for about 30 minutes, then remove from the pan, slice, and serve.
