Ingredients

Dry Ingredients

  • 2 cups whole wheat flour
  • 2 tbsp corn starch
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Wet Ingredients

  • 1 large over-ripe banana
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • ¼ cup unpasteurized honey
  • ¼ cup coconut oil
  • ¼ cup fresh orange juice
  • 1 tbsp pure vanilla extract
  • 1 zest orange

Add-ins

  • 8 oz fresh raspberries

Instructions

  1. Preheat the oven to 350°F and grease and flour a loaf pan.
  2. In a large mixing bowl, combine the banana, eggs, Greek yogurt, honey, melted coconut oil, orange juice, vanilla extract, and orange zest, then mash and whisk until well combined.
  3. In a separate bowl, mix the flour, corn starch, cinnamon, baking powder, baking soda, and salt until fully combined.
  4. Add the dry ingredients to the wet ingredients and mix gently with a rubber spatula until combined, then carefully fold in the raspberries.
  5. Transfer the batter to the prepared loaf pan and spread evenly.
  6. Bake for 60 minutes or until the top is brown and a toothpick comes out clean.
  7. Let the bread cool on a rack for about 30 minutes, then remove from the pan, slice, and serve.
