Ingredients

  • ½ cup golden raisins or dried blueberries or cranberries
  • 1 cup all purpose flour
  • 2 tablespoons all purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup unsalted butter, melted
  • ½ cup sugar
  • ½ cup oats
  • 1 tablespoon raw sugar
  • 2 large eggs
  • 1 ½ cups very ripe bananas, mashed
  • ½ cup chopped pecans or walnuts
  • 1 teaspoon pure vanilla extract

Instructions

  1. Butter and flour a 9-inch loaf pan.
  2. Preheat the oven to 325°F.
  3. In a small bowl, combine flour, salt, baking soda, and baking powder.
  4. In a large bowl, mix sugar and melted butter, then add eggs one at a time.
  5. Mix in the mashed bananas, followed by raisins, oats, nuts, and vanilla extract.
  6. Gradually add the flour mixture, mixing well after each addition.
  7. Pour the batter into the prepared loaf pan and bake for 1 hour.
  8. Optionally, sprinkle raw sugar on top before baking.
  9. Check doneness with a toothpick; it should come out clean.
  10. Cool the bread in the pan for 15 minutes before removing.
