Ingredients

The French Toast

  • 6 large eggs
  • 2 cups milk
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • teaspoons ground cinnamon
  • a pinch ground nutmeg
  • 6 cups bread cubes
  • 1 tablespoon cane sugar

The Berry Sauce (Optional)

  • 1 lb frozen berries
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • a pinch salt

Instructions

  1. Grease the slow cooker with cooking spray or butter.
  2. In a large bowl, whisk together the eggs, milk, maple syrup, vanilla, 1 teaspoon of cinnamon, and nutmeg.
  3. Fold in the bread cubes and let the mixture rest for 5-10 minutes.
  4. Sprinkle the mixture with sugar and the remaining ½ teaspoon of cinnamon.
  5. Pour the mixture into the slow cooker, cover, and cook on HIGH for 2 hours or LOW for 4 hours until cooked through.
  6. For the berry sauce, heat a saucepan over medium heat, add berries and maple syrup, and cook for 7-8 minutes.
  7. Stir the berries, maintain a simmer, and cook for another 7 minutes.
  8. Mash the berries and cook uncovered for 15-20 minutes until the sauce thickens.
  9. Stir in vanilla and a pinch of salt, then let cool before storing.
