Grilled Polenta Stuffed with Blue Cheese and Walnuts

Instructions
- Boil water and salt in a large saucepan.
- Gradually whisk in polenta, then reduce heat and simmer for about 20 minutes, whisking occasionally.
- Coat an 8" cake pan with cooking spray and pour in half the polenta, spreading it evenly.
- Sprinkle blue cheese and walnuts on top, then cover with the remaining polenta.
- Cover with plastic wrap and refrigerate until chilled, preferably overnight.
- Cut the chilled polenta into squares and then into triangles.
- Brush with olive oil and grill on medium heat for 5-7 minutes per side until golden.
- Serve with arugula tossed with olive oil, salt, pepper, and lemon juice, and drizzle with reduced balsamic vinegar if desired.
