Grilled Polenta Stuffed with Blue Cheese and Walnuts

Ingredients

The polenta

  • 4 cups water
  • ¾ tsp salt
  • 175 grams polenta

The filling

  • 40 grams blue cheese
  • 45 grams walnuts

For serving

  • to taste arugula or your choice of greens
  • to taste tbsp olive oil
  • to taste salt
  • to taste pepper
  • to taste squeeze of lemon juice
  • to taste reduced balsamic vinegar

Instructions

  1. Boil water and salt in a large saucepan.
  2. Gradually whisk in polenta, then reduce heat and simmer for about 20 minutes, whisking occasionally.
  3. Coat an 8" cake pan with cooking spray and pour in half the polenta, spreading it evenly.
  4. Sprinkle blue cheese and walnuts on top, then cover with the remaining polenta.
  5. Cover with plastic wrap and refrigerate until chilled, preferably overnight.
  6. Cut the chilled polenta into squares and then into triangles.
  7. Brush with olive oil and grill on medium heat for 5-7 minutes per side until golden.
  8. Serve with arugula tossed with olive oil, salt, pepper, and lemon juice, and drizzle with reduced balsamic vinegar if desired.
