Tuna Cakes

Ingredients

  • 2 tablespoons olive oil
  • ¼ cup diced onion
  • 2 tablespoons diced celery
  • 2 cloves garlic
  • 2 large eggs
  • 3 cans tuna (5 oz each, drained)
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons light mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon dried parsley flakes
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon dried dill

Instructions

  1. Heat 1 teaspoon of olive oil in a large sauté pan over medium heat and cook the onion and celery until softened.
  2. Add minced garlic and cook for an additional 30-60 seconds until fragrant, then remove from heat.
  3. In a mixing bowl, combine beaten eggs, the cooked vegetable mixture, drained tuna, ¼ cup of breadcrumbs, ¼ cup of Parmesan cheese, mayonnaise, lemon juice, parsley flakes, salt, pepper, and dill. Mix until well combined.
  4. Shape the mixture into 9 patties, each about ¼ cup in size.
  5. Combine the remaining breadcrumbs and Parmesan cheese in a dish and coat the patties on both sides.
  6. Wipe out the sauté pan and heat 1 tablespoon of oil over medium heat. Cook half of the patties for about 3 minutes on each side until golden brown. Repeat with remaining patties.
