Tuna Cakes

Instructions
- Heat 1 teaspoon of olive oil in a large sauté pan over medium heat and cook the onion and celery until softened.
- Add minced garlic and cook for an additional 30-60 seconds until fragrant, then remove from heat.
- In a mixing bowl, combine beaten eggs, the cooked vegetable mixture, drained tuna, ¼ cup of breadcrumbs, ¼ cup of Parmesan cheese, mayonnaise, lemon juice, parsley flakes, salt, pepper, and dill. Mix until well combined.
- Shape the mixture into 9 patties, each about ¼ cup in size.
- Combine the remaining breadcrumbs and Parmesan cheese in a dish and coat the patties on both sides.
- Wipe out the sauté pan and heat 1 tablespoon of oil over medium heat. Cook half of the patties for about 3 minutes on each side until golden brown. Repeat with remaining patties.
