Tuna Fish Patties

Ingredients

  • 1 can chunk light tuna, in water, drained
  • 2 tbsp low fat plain yogurt
  • 2 tbsp whole wheat bread crumbs
  • 2 egg whites
  • 1 tsp sliced green olives
  • 1 tsp sliced kalamata olives
  • 1 unit green onion, sliced
  • 1 tbsp fresh dill, chopped
  • ¼ tsp paprika
  • ¼ tsp salt
  • 1 pinch black pepper

Instructions

  1. Combine all ingredients in a mixing bowl.
  2. Coat a non-stick pan with cooking spray and heat over medium heat.
  3. Drop spoonfuls of the tuna mixture into the pan to form patties.
  4. Cook the patties for about 5 minutes until golden and firm enough to flip.
  5. Flip the patties delicately and cook the other side for an additional 3 to 5 minutes.
  6. Serve as is or in a hamburger bun or pita bread, garnished with yogurt or sour cream if desired.
