Catalan-Style Sautéed Spinach

Ingredients

  • 2 tablespoons olive oil
  • 1 cup onion, diced
  • ½ an apple, diced (optional)
  • 4–6 cloves garlic, rough chopped
  • ½ teaspoon chili flakes
  • ¼ cup golden raisins (or regular raisins, currants, craisins)
  • ¼ cup toasted pine nuts (or slivered almonds)
  • ¼ cup sherry wine (or white wine or broth)
  • 5–6 cups packed spinach, chopped (or sub chard, beet tops, kale, etc.)
  • to taste salt and pepper
  • a pinch sugar, nutmeg, and white pepper

Instructions

  1. Heat olive oil in a large sauté pan over medium-high heat.
  2. Add diced onion and apple, stirring until tender, about 3-4 minutes.
  3. Lower the heat to medium, add garlic and chili flakes, and sauté until fragrant.
  4. Add raisins and wine, cooking until the wine mostly evaporates.
  5. Add the greens, stirring to wilt them; spinach will cook quickly while sturdier greens take longer.
  6. Season with salt and pepper, and continue sautéing until the desired tenderness is reached.
  7. Taste and adjust seasoning, adding sugar, nutmeg, and white pepper if desired.
