Catalan-Style Sautéed Spinach

Instructions
- Heat olive oil in a large sauté pan over medium-high heat.
- Add diced onion and apple, stirring until tender, about 3-4 minutes.
- Lower the heat to medium, add garlic and chili flakes, and sauté until fragrant.
- Add raisins and wine, cooking until the wine mostly evaporates.
- Add the greens, stirring to wilt them; spinach will cook quickly while sturdier greens take longer.
- Season with salt and pepper, and continue sautéing until the desired tenderness is reached.
- Taste and adjust seasoning, adding sugar, nutmeg, and white pepper if desired.
