Sautéed Spinach

Instructions
- Heat the olive oil and butter in a Dutch oven over medium heat.
- Once the butter starts bubbling, add the minced garlic.
- Add the spinach in big handfuls, stirring until it begins to wilt.
- Cover the pot and reduce the heat, letting it cook for 3 minutes.
- Uncover and stir; if not wilted enough, continue stirring until it is.
- Stir in the salt, 1 tablespoon of Parmesan, and red pepper flakes.
- Transfer to a serving bowl and top with the remaining Parmesan.
