Sautéed Spinach

Ingredients

  • ½ tablespoon extra-virgin olive oil
  • ½ tablespoon unsalted butter
  • 1 clove garlic, minced (about 1 teaspoon)
  • 12 ounces baby spinach
  • ¼ teaspoon kosher salt
  • 2 tablespoons freshly grated Parmesan cheese
  • to taste red pepper flakes

Instructions

  1. Heat the olive oil and butter in a Dutch oven over medium heat.
  2. Once the butter starts bubbling, add the minced garlic.
  3. Add the spinach in big handfuls, stirring until it begins to wilt.
  4. Cover the pot and reduce the heat, letting it cook for 3 minutes.
  5. Uncover and stir; if not wilted enough, continue stirring until it is.
  6. Stir in the salt, 1 tablespoon of Parmesan, and red pepper flakes.
  7. Transfer to a serving bowl and top with the remaining Parmesan.
