Instructions
- Heat olive oil and slivered garlic in a cold skillet over medium heat until fragrant and caramelized, being careful not to burn the garlic.
- Remove the garlic from the oil, leaving the oil in the skillet.
- Add spinach in batches, tossing it in the oil and seasoning with salt and pepper until it wilts.
- Return the garlic to the skillet, toss with the spinach, and add lemon juice or vinegar if desired.
- Serve hot.
