Sautéed Garlic Spinach

Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the spinach and most of the minced garlic, saving about 1 tablespoon of garlic for later.
- If necessary, add half the spinach first and allow it to wilt before adding the rest.
- Once the spinach is mostly cooked down, add the remaining garlic and stir frequently.
- Cook until the spinach is wilted and most of the liquid has evaporated.
- Season with salt, pepper, and vinegar or lemon juice to taste.
- Serve immediately or store for meal prep.
