Spiced Spinach with Walnuts

Ingredients

The base

  • 3 tablespoons sunflower oil, ghee, or clarified butter
  • ¾ teaspoon fine grain sea salt
  • 4 large leeks, trimmed & thinly sliced
  • ¾ teaspoon chile flakes
  • ¾ teaspoon cumin seeds, lightly crushed
  • ¼ teaspoon ground turmeric
  • ¾ teaspoon dried oregano
  • 40 leaves fresh mint
  • 4-5 handfuls spinach, very roughly chopped
  • 1 whole lemon, cut into wedges

The toppings

  • ½ cup walnuts, toasted
  • ½ cup crumbled feta, fresh ricotta, or fresh paneer

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add salt and leeks, cooking until tender and starting to brown.
  3. Stir in chile flakes, cumin seeds, turmeric, and oregano, cooking for another 30 seconds.
  4. Add mint leaves and spinach in batches, stirring constantly until spinach wilts.
  5. Squeeze lemon juice over the spinach, adjust seasoning if necessary.
  6. Serve topped with walnuts and crumbled cheese.
