Spiced Spinach with Walnuts

Instructions
- Heat the oil in a large skillet over medium-high heat.
- Add salt and leeks, cooking until tender and starting to brown.
- Stir in chile flakes, cumin seeds, turmeric, and oregano, cooking for another 30 seconds.
- Add mint leaves and spinach in batches, stirring constantly until spinach wilts.
- Squeeze lemon juice over the spinach, adjust seasoning if necessary.
- Serve topped with walnuts and crumbled cheese.
