Italian Sausage Frittata

Ingredients

The base

  • 6 whole eggs
  • 2 egg whites egg whites
  • cup 1% milk
  • ½ teaspoon kosher salt
  • a few dashes Tabasco sauce

The filling

  • 4 ounces Italian sausage
  • teaspoons extra-virgin olive oil
  • 3 cups baby kale, thinly sliced
  • ¼ cup chopped green onions
  • 2 cloves garlic, minced
  • ½ cup chopped red bell pepper or whole grape tomatoes
  • ½ cup feta cheese, crumbled

Instructions

  1. Whisk together the eggs, egg whites, milk, salt, and Tabasco sauce; set aside.
  2. In a 9" oven-safe skillet, cook the sausage and then drain it on a paper towel.
  3. Return the pan to heat and add olive oil; sauté the kale, green onions, and garlic until the kale is wilted.
  4. Add the chopped pepper or tomatoes and cook until tender.
  5. Turn the oven broiler to high.
  6. Sprinkle the cooked sausage over the veggies, then add feta cheese and pour the egg mixture on top.
  7. Cook on medium heat for 5-6 minutes without stirring, then place in the oven for 2-3 minutes until set and lightly browned.
  8. Remove from the oven and let it stand for 5-10 minutes before cutting.
