Instructions
- Chop the turkey sausage into smaller chunks and cook in a heated pan for 5 minutes until done, then set aside.
- In the same pan, add oil and cook spinach, mushrooms, and minced garlic until the spinach is wilted, then drain and set aside.
- In a large bowl, whisk together eggs, black pepper, garlic powder, and heavy whipping cream until smooth.
- Heat a cast iron skillet on low and coat with butter, then return the cooked ingredients to the skillet and spread evenly.
- Pour the egg mixture over the ingredients, then top with cheddar jack cheese and halved cherry tomatoes.
- Bake at 350°F for 30 minutes, allow to cool, then serve.
