Turkey Sausage & Spinach Frittata

Ingredients

  • 12 oz. Turkey Kielbasa Sausage
  • 12 Large Organic Eggs
  • ½ cup Heavy Whipping Cream
  • 2 cups Cheddar Jack Shredded Cheese
  • 6 oz. Fresh Leaf Spinach
  • 5 oz. Cherry Salad Tomatoes
  • 4 oz. Fresh White Mushrooms
  • 1 tsp. Minced Garlic
  • ½ tsp. Black Pepper
  • ½ tsp. Garlic Powder
  • 3 tbsp. Butter

Instructions

  1. Chop the turkey sausage into smaller chunks and cook in a heated pan for 5 minutes until done, then set aside.
  2. In the same pan, add oil and cook spinach, mushrooms, and minced garlic until the spinach is wilted, then drain and set aside.
  3. In a large bowl, whisk together eggs, black pepper, garlic powder, and heavy whipping cream until smooth.
  4. Heat a cast iron skillet on low and coat with butter, then return the cooked ingredients to the skillet and spread evenly.
  5. Pour the egg mixture over the ingredients, then top with cheddar jack cheese and halved cherry tomatoes.
  6. Bake at 350°F for 30 minutes, allow to cool, then serve.
