Sausage and Cheese Frittata

Ingredients

  • ½ tube sausage
  • 6 large eggs
  • splash none skim milk
  • 1 cup green pepper, diced
  • 1 cup onion, diced
  • 1 cup tomatoes, diced
  • 1 cup Colby cheese, shredded

Instructions

  1. Cook the sausage, shred the cheese, and chop the vegetables.
  2. Mix the eggs with a little bit of skim milk.
  3. Spray an 8-inch skillet with cooking spray and pour in the egg mixture.
  4. Add the vegetables and sausage, cooking for about 5-7 minutes until almost done.
  5. Transfer the skillet to a preheated oven at 425°F and cook until set.
  6. Remove from the oven, sprinkle cheese on top, and return until melted.
  7. Cut the frittata into wedges and serve hot.
