Ingredients

The frittata

  • 12 count eggs
  • 1 cup almond milk (or heavy cream)
  • ½ tsp sea salt
  • ½ tsp ground pepper

The filling

  • 8 oz Jones Dairy Farm No Sugar All Natural Pork Sausage Roll
  • 1 cup mushrooms, sliced
  • 3 cups broccoli, roughly chopped
  • 1 cup shredded parmesan (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. In an oven-safe skillet, cook the sausage over medium heat, breaking it into bits until mostly cooked.
  3. Prepare the mushrooms, broccoli, and cheese while the sausage cooks.
  4. In a bowl, mix the eggs with almond milk (or cream), salt, and pepper.
  5. Once the sausage is mostly cooked, add the mushrooms and broccoli, cooking until the sausage is fully cooked and vegetables soften.
  6. Pour the egg mixture into the skillet and let it cook for a few minutes until the bottom sets slightly.
  7. Top with cheese if using, then bake in the oven for 25-30 minutes until the eggs are set.
  8. Optionally broil for a couple of minutes to brown the top, then remove from the oven, cut into pieces, and serve.
