Instructions
- Preheat the oven to 350°F.
- In an oven-safe skillet, cook the sausage over medium heat, breaking it into bits until mostly cooked.
- Prepare the mushrooms, broccoli, and cheese while the sausage cooks.
- In a bowl, mix the eggs with almond milk (or cream), salt, and pepper.
- Once the sausage is mostly cooked, add the mushrooms and broccoli, cooking until the sausage is fully cooked and vegetables soften.
- Pour the egg mixture into the skillet and let it cook for a few minutes until the bottom sets slightly.
- Top with cheese if using, then bake in the oven for 25-30 minutes until the eggs are set.
- Optionally broil for a couple of minutes to brown the top, then remove from the oven, cut into pieces, and serve.
