Ingredients

The noodles

  • 8 ounces rice noodles or noodles of choice
  • 1 teaspoon cooking oil (canola or avocado)

The sauce

  • 3 tablespoons sriracha
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice (from one lime)
  • ¼ cup vegetable broth
  • 1 teaspoon corn starch
  • 1 teaspoon water

Optional serving ideas

  • 1-2 crowns broccoli
  • 14 ounces extra-firm tofu
  • 1-3 teaspoons cooking oil
  • 1 tablespoon nutritional yeast
  • ½ teaspoon black pepper
  • ¼ teaspoon kosher salt

Instructions

  1. Cook the rice noodles in salted boiling water until al dente, then drain and toss with a small amount of oil.
  2. In a small saucepot, whisk together sriracha, honey, rice vinegar, soy sauce, lime juice, and vegetable broth. Adjust seasonings to taste.
  3. Bring the sauce to a simmer over medium-high heat.
  4. Mix corn starch with water to create a slurry, then add it to the sauce and reduce heat to low. Simmer until thickened, about 2-3 minutes.
  5. Toss the cooked noodles with the sauce.
  6. For serving, steam broccoli until tender and season with salt and pepper.
  7. Press tofu to remove excess moisture, then tear into pieces and season with oil, nutritional yeast, black pepper, and salt.
  8. Air fry the tofu at 375°F for 15-20 minutes until crispy and golden.
  9. Serve the noodles with steamed broccoli and air-fried tofu.
