Instructions
- Cook the rice noodles in salted boiling water until al dente, then drain and toss with a small amount of oil.
- In a small saucepot, whisk together sriracha, honey, rice vinegar, soy sauce, lime juice, and vegetable broth. Adjust seasonings to taste.
- Bring the sauce to a simmer over medium-high heat.
- Mix corn starch with water to create a slurry, then add it to the sauce and reduce heat to low. Simmer until thickened, about 2-3 minutes.
- Toss the cooked noodles with the sauce.
- For serving, steam broccoli until tender and season with salt and pepper.
- Press tofu to remove excess moisture, then tear into pieces and season with oil, nutritional yeast, black pepper, and salt.
- Air fry the tofu at 375°F for 15-20 minutes until crispy and golden.
- Serve the noodles with steamed broccoli and air-fried tofu.
