Instructions
- Preheat the oven to 350°F.
- Cook spinach until fully cooked, then cool and squeeze out excess water.
- In a mixing bowl, combine cream cheese, mayonnaise, egg, and old bay seasoning until blended.
- Fold in spinach, roasted peppers, mozzarella, and crabmeat gently.
- If the mixture is too loose, add some breadcrumbs to tighten it up.
- Season salmon fillets with salt and pepper.
- Place the crabmeat stuffing on top of each salmon fillet and sprinkle with breadcrumbs.
- Add a little water to the baking dish to keep the salmon moist.
- Bake for 18-22 minutes until cooked but not overcooked.
