Crab and Spinach Stuffed Salmon

Ingredients

The salmon

  • 24 ounces salmon fillets

The stuffing

  • 8 ounces crabmeat
  • 4 ounces cream cheese
  • 1 large egg
  • 1 tablespoon mayonnaise
  • ½ cup cooked baby spinach
  • 1 tablespoon roasted red peppers
  • ½ cup mozzarella cheese
  • 1 teaspoon old bay seasoning
  • ¼ teaspoon sea salt
  • teaspoon black pepper
  • 2 tablespoons panko bread crumbs

Instructions

  1. Preheat the oven to 350°F.
  2. Cook spinach until fully cooked, then cool and squeeze out excess water.
  3. In a mixing bowl, combine cream cheese, mayonnaise, egg, and old bay seasoning until blended.
  4. Fold in spinach, roasted peppers, mozzarella, and crabmeat gently.
  5. If the mixture is too loose, add some breadcrumbs to tighten it up.
  6. Season salmon fillets with salt and pepper.
  7. Place the crabmeat stuffing on top of each salmon fillet and sprinkle with breadcrumbs.
  8. Add a little water to the baking dish to keep the salmon moist.
  9. Bake for 18-22 minutes until cooked but not overcooked.
