Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Heat 2 teaspoons of olive oil in a skillet and wilt the spinach with garlic, salt, pepper, and red pepper flakes.
- Stir in the cream cheese until melted, then add mozzarella and Parmesan until combined.
- Make a pocket in each salmon fillet and stuff with the spinach mixture.
- Drizzle with remaining olive oil, season with salt and pepper, and place on the baking sheet.
- Bake for 8 to 10 minutes until the salmon is cooked through.
