Stuffed Salmon with Spinach and Cream Cheese

Ingredients

The filling

  • 5 ounces fresh baby spinach
  • 1 clove garlic
  • ¼ cup reduced-fat cream cheese
  • ¼ cup shredded part-skim mozzarella cheese
  • ¼ cup finely grated Parmesan
  • teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • pinch red pepper flakes

The salmon

  • 4 6 ounce salmon fillets
  • 2 teaspoons extra virgin olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Heat 2 teaspoons of olive oil in a skillet and wilt the spinach with garlic, salt, pepper, and red pepper flakes.
  3. Stir in the cream cheese until melted, then add mozzarella and Parmesan until combined.
  4. Make a pocket in each salmon fillet and stuff with the spinach mixture.
  5. Drizzle with remaining olive oil, season with salt and pepper, and place on the baking sheet.
  6. Bake for 8 to 10 minutes until the salmon is cooked through.
