Stuffed Salmon

Ingredients

The salmon

  • 4 fillets salmon, skinless
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 tablespoon lemon juice

The filling

  • 3 cups baby spinach
  • 4 ounces cream cheese, softened
  • ¼ cup parmesan cheese, grated
  • ½ teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Pat dry the salmon fillets and rub olive oil on them, seasoning both sides with salt and pepper.
  2. Make slits in the salmon fillets lengthwise without cutting too deep.
  3. Sauté the spinach with a splash of water until wilted, then drain and mix with cream cheese, parmesan cheese, and Italian seasoning.
  4. Stuff the salmon fillets with the spinach filling and secure the ends with a toothpick if needed.
  5. Heat butter in a non-stick skillet over medium heat, add the stuffed salmon, and cook for 12-15 minutes, flipping halfway.
  6. Drizzle with lemon juice before serving.
