Stuffed Salmon

The filling

baby spinach

cream cheese, softened

Instructions
- Pat dry the salmon fillets and rub olive oil on them, seasoning both sides with salt and pepper.
- Make slits in the salmon fillets lengthwise without cutting too deep.
- Sauté the spinach with a splash of water until wilted, then drain and mix with cream cheese, parmesan cheese, and Italian seasoning.
- Stuff the salmon fillets with the spinach filling and secure the ends with a toothpick if needed.
- Heat butter in a non-stick skillet over medium heat, add the stuffed salmon, and cook for 12-15 minutes, flipping halfway.
- Drizzle with lemon juice before serving.
