Instructions
- Create a pocket in each salmon fillet by cutting lengthwise through the middle.
- Pat the salmon dry and brush with olive oil and lemon juice, then season with salt and pepper.
- Sauté the spinach in olive oil until wilted, then set aside to cool.
- Squeeze out excess liquid from the spinach and mix with garlic, cream cheese, parmesan, salt, and pepper.
- Divide the filling into 4 portions and stuff each salmon fillet.
- Cook the salmon either by searing in a skillet or baking in the oven until it reaches the desired doneness.
