Stuffed Salmon

Ingredients

The salmon

  • 4 7-oz Salmon fillets
  • 1 tbsp Olive oil
  • ½ tbsp Lemon juice
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

The filling

  • ½ tbsp Olive oil
  • 3 oz Fresh spinach
  • 2 cloves Garlic (minced)
  • 4 oz Cream cheese (softened at room temperature)
  • ¼ cup Grated parmesan cheese
  • ¼ tsp Sea salt
  • ¼ tsp Black pepper

Instructions

  1. Create a pocket in each salmon fillet by cutting lengthwise through the middle.
  2. Pat the salmon dry and brush with olive oil and lemon juice, then season with salt and pepper.
  3. Sauté the spinach in olive oil until wilted, then set aside to cool.
  4. Squeeze out excess liquid from the spinach and mix with garlic, cream cheese, parmesan, salt, and pepper.
  5. Divide the filling into 4 portions and stuff each salmon fillet.
  6. Cook the salmon either by searing in a skillet or baking in the oven until it reaches the desired doneness.
