20-Minute Tri-Tip Sandwich

Ingredients

The sauce

  • ½ cup mayonnaise
  • 1 clove garlic
  • 2 tablespoons capers
  • to taste salt
  • to taste black pepper

The sandwiches

  • 1 pound leftover grilled tri-tip
  • 2 ounces sliced provolone
  • 1 small red onion
  • 6 rolls split and toasted
  • 2 cups baby arugula
  • 1 tomato sliced

Instructions

  1. Combine mayonnaise, garlic, capers, salt, and pepper to make the sauce.
  2. Heat the sliced tri-tip in a skillet or on a grill.
  3. Add cheese slices to the tri-tip and cover until melted.
  4. Remove from heat and cook the onion in the skillet until softened.
  5. Split and toast the buns.
  6. Spread the mayonnaise mixture on the rolls and top with arugula.
  7. Add the meat and cheese, then top with onion and tomato.
  8. Slice the sandwiches in half and serve.
