Instructions
- Heat olive oil in a large Dutch oven over medium-high heat.
- Add ground beef and cook until browned, then drain excess grease.
- In the same pot, add more olive oil and sauté onion and green pepper until softened.
- Stir in garlic and spices, cooking for one minute.
- Add beans, diced tomatoes, corn, and green chiles, and stir to combine.
- Pour in beef broth and water, then add chopped cilantro.
- Bring the mixture to a boil, then reduce heat and let simmer for 30 minutes.
- Serve hot, garnished with your choice of toppings.
