Ingredients

The soup base

  • 2 pounds ground beef
  • 1 large onion, diced
  • 3 cups water or chicken broth or beef broth
  • 2 cans kidney beans, undrained
  • 2 cans diced tomatoes, undrained
  • 1 can whole kernel corn, undrained
  • 1 can diced green chilies, undrained
  • 2 tablespoons taco seasoning
  • 1 packet ranch dressing mix

Toppings

  • to taste shredded cheese
  • to taste sour cream
  • to taste tortilla chips
  • to taste diced avocado
  • to taste minced fresh cilantro
  • to taste lime wedges

Instructions

  1. In a Dutch Oven or large soup pot, cook ground beef and onion over medium heat until browned, then drain.
  2. Add water, beans, tomatoes, corn, chiles, and their juices to the pot.
  3. Stir in taco seasoning and ranch dressing mix.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Serve with your choice of toppings.
