Ingredients

The soup

  • ½ to 1 pound lean ground beef or ground turkey
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup chicken or beef broth
  • 2 cans (4-ounces each) green chiles
  • 1 can (15-ounce) red kidney beans, drained and rinsed
  • 1 can (15-ounce) pinto beans, drained and rinsed
  • 1 can (15-ounce) diced tomatoes
  • 2 cans (8-ounces each) tomato sauce
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon paprika, smoked or regular
  • ¼ teaspoon garlic powder
  • 1 cup frozen corn kernels

Toppings

  • to taste tortilla chips or strips
  • to taste sour cream
  • to taste cheese
  • to taste cilantro

Instructions

  1. For stovetop: Brown the ground beef with salt and pepper in a pot, then drain the grease.
  2. Add the remaining ingredients, except for corn and toppings, to the pot and stir well.
  3. Bring to a simmer and cook for 15 to 30 minutes.
  4. Stir in the corn and heat through, then season to taste with salt and pepper before serving with toppings.
  5. For slow cooker: Brown the ground beef with salt and pepper in a skillet, then drain the grease.
  6. Transfer the beef to the slow cooker and add all remaining ingredients except corn and toppings.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. Stir in the corn and heat through before serving with toppings.
