Ingredients

The soup

  • 1 lb Cooked Ground Beef (or ground turkey, or chicken)
  • 1 oz Taco Seasoning (or 3 Tbsp of homemade)
  • 1 oz Ranch Dressing Mix (or 3 Tbsp of homemade)
  • 1 ½ tsp Onion Powder
  • 1 tsp Oregano
  • ¼ tsp Salt
  • ½ tsp Pepper
  • 1 15 oz can Red Kidney Beans, drained (or pinto beans)
  • 1 15 oz can Black Beans, drained
  • 1 10 oz can Rotel
  • 1 14 oz can Diced Tomatoes
  • 1 7 oz can Diced Green Chiles (preferably fire roasted)
  • 3 cups Corn, frozen (or 1 can, drained)
  • 1 14.5 oz can Chicken Broth, low sodium (about 2 cups, or more for a soupier result)

Garnishes

  • Shredded Cheese
  • Sour Cream
  • Avocado
  • Cilantro
  • Jalapeño
  • Corn Tortillas

Instructions

  1. Combine all the ingredients in the slow cooker and stir well.
  2. Cook on High for 2 hours or Low for 4 hours.
  3. Serve garnished with your choice of toppings like corn tortillas, sour cream, avocado, cheese, and jalapeños.
