Instructions
- Brown the ground beef in a skillet over medium heat and reserve the fat.
- Saute the diced onion in the skillet until softened.
- Transfer the cooked beef and onion to a slow cooker.
- Add the tomatoes, chicken broth, corn, pinto beans, and taco seasoning to the slow cooker.
- Cook the soup on low for 6 hours, or for a quicker option, cook on high for 2 hours or simmer on the stovetop for 1 hour.
- Serve warm with optional toppings.
