Ingredients

The soup

  • 1 lb ground beef
  • 1 medium onion, diced
  • 15 oz can tomatoes
  • 2 cups chicken broth
  • 2 cups corn
  • 4 cups cooked pinto beans
  • 1 tbsp taco seasoning

Optional toppings

  • to taste cilantro
  • to taste grated cheese
  • to taste avocado
  • to taste sour cream
  • to taste scallions

Instructions

  1. Brown the ground beef in a skillet over medium heat and reserve the fat.
  2. Saute the diced onion in the skillet until softened.
  3. Transfer the cooked beef and onion to a slow cooker.
  4. Add the tomatoes, chicken broth, corn, pinto beans, and taco seasoning to the slow cooker.
  5. Cook the soup on low for 6 hours, or for a quicker option, cook on high for 2 hours or simmer on the stovetop for 1 hour.
  6. Serve warm with optional toppings.
