Ingredients

The soup

  • pounds ground beef
  • 1 each red onion, diced
  • 1 each red bell pepper, diced
  • cups black beans, drained and rinsed (1 can)
  • 1 cup frozen corn, drained and rinsed
  • 28 ounces diced tomatoes
  • cups beef broth
  • 4 ounces mild green chilies
  • 3 tablespoons taco seasoning

Toppings

  • to taste sour cream
  • to taste tortilla chips
  • to taste shredded cheese
  • to taste jalapeños
  • to taste lime juice
  • to taste cilantro

Instructions

  1. Brown the ground beef in a large dutch oven over medium-high heat.
  2. Add the diced onions and red bell pepper, cooking for another 5 minutes.
  3. Drain excess fat if necessary and transfer the mixture to a slow cooker.
  4. Add the black beans, corn, tomatoes, beef broth, mild green chilies, and taco seasoning to the slow cooker and stir to combine.
  5. Cook over low heat for 6 to 8 hours.
