Ingredients

The soup

  • 1 tablespoon oil
  • 1 pound lean ground beef
  • 1-2 tablespoons oil
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 tablespoon minced garlic
  • 1 jalapeno seeded and finely chopped
  • 1 teaspoon paprika
  • 2 teaspoons oregano spice
  • 1 medium onion, chopped (about 1 ½ cup)
  • 1 can (8 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • cups frozen corn
  • 4 ounces green chile peppers
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 2 cups beef broth or more
  • 1 tablespoon taco seasoning
  • to taste salt and pepper

Optional toppings

  • to taste sour cream
  • to taste cilantro
  • to taste green onions
  • to taste sliced avocado
  • to taste tortilla strips

Instructions

  1. Heat oil in a large skillet over medium-high heat and brown the ground beef for 3-5 minutes, then set aside.
  2. In the same pan, add more oil and sauté chili pepper, cumin, garlic, jalapeno, paprika, and oregano for about 30 seconds.
  3. Add chopped onions and the browned beef, cooking until the onions are soft, about 3-5 minutes.
  4. Stir in tomato sauce, diced tomatoes, corn, green chili, black beans, beef broth, pinto beans, and taco seasoning.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes, adjusting seasoning with salt, pepper, and water as needed.
  6. Serve warm with optional toppings.
