Vegan Feta Cheese

Ingredients

  • 1 lb block of firm or extra firm tofu
  • 1 tablespoon nutritional yeast
  • ¼ teaspoon ground black pepper
  • ½ teaspoon sea salt
  • 3 tablespoons lime or lemon juice
  • 3 tablespoons olive oil

Instructions

  1. Cut the tofu into small cubes or crumble it into a bowl.
  2. In a jar, mix the nutritional yeast, pepper, sea salt, lime juice, and olive oil, then shake until combined.
  3. Pour the mixture over the tofu and gently stir to coat all the tofu.
  4. Transfer the tofu back to the jar and pour any excess brine over it.
  5. Let it marinate for at least an hour, preferably overnight, and adjust lime juice to taste before serving.
