Ingredients

The mushrooms

  • 1 lb fresh button mushrooms

The marinade

  • 1 fresh lemon
  • 2 cloves garlic
  • ¼ cup olive oil
  • 5 sprigs fresh thyme
  • 1 leaf bay leaf
  • to taste salt
  • to taste pepper

Instructions

  1. Rinse the mushrooms and cut them into halves or quarters.
  2. Peel and mince the garlic, then zest and juice the lemon.
  3. In a skillet, cook the mushrooms in half of the olive oil until soft and they have released their water.
  4. Remove from heat and add the lemon juice, zest, minced garlic, thyme leaves, bay leaf, remaining olive oil, salt, and pepper.
  5. Stir the mixture well and let it cool to room temperature to allow the flavors to meld.
