Marinated Mushrooms

Instructions
- 1. In a large pot, bring 8 cups of water and 2 tablespoons of salt to a boil.
- 2. Add the mushrooms and cook until tender, about 3 to 4 minutes, then drain well.
- 3. In a large bowl, whisk together olive oil and white wine vinegar.
- 4. Stir in red onions, garlic, brown sugar, oregano, peppercorns, red pepper flakes (if using), and bay leaf.
- 5. Add the mushrooms to the bowl and coat them well with the marinade.
- 6. Season with salt and pepper to taste.
- 7. Transfer the mushrooms to an airtight container and chill for at least 5 minutes, preferably 8 hours or overnight.
- 8. Remove the bay leaf and serve garnished with fresh parsley.
