Ingredients

The mushrooms

  • 1 pound cremini mushrooms, halved

The marinade

  • ¼ cup olive oil
  • ¼ cup white wine vinegar
  • ¼ cup red onion, minced
  • 2 cloves garlic, minced
  • 2 teaspoons brown sugar, packed
  • ½ teaspoon dried oregano
  • ½ teaspoon whole black peppercorns, cracked
  • ¼ teaspoon red chili flakes (optional)
  • 1 leaf bay leaf
  • to taste salt and freshly ground black pepper
  • 2 tablespoons fresh parsley, minced (for garnish)

Instructions

  1. 1. In a large pot, bring 8 cups of water and 2 tablespoons of salt to a boil.
  2. 2. Add the mushrooms and cook until tender, about 3 to 4 minutes, then drain well.
  3. 3. In a large bowl, whisk together olive oil and white wine vinegar.
  4. 4. Stir in red onions, garlic, brown sugar, oregano, peppercorns, red pepper flakes (if using), and bay leaf.
  5. 5. Add the mushrooms to the bowl and coat them well with the marinade.
  6. 6. Season with salt and pepper to taste.
  7. 7. Transfer the mushrooms to an airtight container and chill for at least 5 minutes, preferably 8 hours or overnight.
  8. 8. Remove the bay leaf and serve garnished with fresh parsley.
