Ingredients

The mushrooms

  • 16 ounces cremini (baby bella) mushrooms

The seasoning

  • 2 tablespoons extra virgin olive oil
  • ¾ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon balsamic vinegar
  • optional chopped fresh thyme

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Clean the mushrooms with a damp cloth and trim off tough stem ends, then cut into quarters.
  3. Place the mushrooms on the baking sheet and drizzle with olive oil, salt, pepper, and ½ tablespoon of balsamic vinegar.
  4. Toss to coat the mushrooms evenly and spread them in a single layer.
  5. Roast the mushrooms for 18 to 20 minutes, tossing halfway through until tender and caramelized.
  6. Remove from the oven and drizzle with the remaining ½ tablespoon of balsamic vinegar and sprinkle with thyme if using.
  7. Toss again and enjoy.
