balsamic vinegar

Instructions
- Preheat the oven to 450°F and line a baking sheet with parchment paper.
- Clean the mushrooms with a damp cloth and trim off tough stem ends, then cut into quarters.
- Place the mushrooms on the baking sheet and drizzle with olive oil, salt, pepper, and ½ tablespoon of balsamic vinegar.
- Toss to coat the mushrooms evenly and spread them in a single layer.
- Roast the mushrooms for 18 to 20 minutes, tossing halfway through until tender and caramelized.
- Remove from the oven and drizzle with the remaining ½ tablespoon of balsamic vinegar and sprinkle with thyme if using.
- Toss again and enjoy.
