Ingredients

The mushrooms

  • 16 ounces cremini mushrooms, quartered, or mixed mushrooms, torn

The seasoning

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon fresh thyme leaves
  • to taste sea salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Place the mushrooms on the baking sheet and drizzle with olive oil, balsamic vinegar, and tamari.
  3. Sprinkle with pepper, toss to coat, and spread evenly on the baking sheet.
  4. Roast for 18 to 20 minutes, tossing halfway, until the mushrooms are tender and browned.
  5. Remove from the oven and toss with parsley and thyme, then season with salt and pepper to taste.
