Ingredients

  • 1 package chicken and apple sausage
  • 1 pound Brussels sprouts
  • 1 pound sweet potato
  • ¼ cup extra virgin lemon olive oil
  • 4 cloves garlic
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup pomegranate arils

Instructions

  1. Preheat the oven to 400 degrees and line a baking sheet with foil.
  2. Toss the sausage, Brussels sprouts, and sweet potato on the baking sheet and set aside.
  3. Whisk together the olive oil, garlic, parsley, salt, and pepper, then drizzle over the sausage mixture.
  4. Toss to combine the ingredients.
  5. Bake in the oven for 15 minutes, then flip the mixture and bake for an additional 10-15 minutes.
  6. Sprinkle with pomegranate seeds and season with additional salt and pepper if desired, then serve immediately.
