Ingredients

The vinaigrette

  • ¼ cup walnuts, toasted and chopped small
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon maple syrup
  • 1 clove garlic, pressed or minced
  • ¼ teaspoon salt
  • teaspoon pepper
  • ¼ cup olive oil

The green beans

  • 1 pound fresh green beans, stem end snapped off
  • to taste fresh basil, mint and chives for garnish (optional)

Instructions

  1. Whisk together the vinaigrette ingredients in a bowl, adding olive oil while whisking.
  2. Heat a dry skillet over medium-high heat and add the green beans, cooking undisturbed for 2 minutes.
  3. Stir the beans and continue to cook until they blister but remain crisp, about 6 minutes.
  4. Add 2 tablespoons of water, cover, and steam for 2-3 minutes.
  5. Transfer the beans to a serving dish, drizzle with vinaigrette, and garnish with herbs.
