Ingredients

The sauce

  • 2 cups toasted walnuts
  • 4 cloves garlic, peeled
  • ¼ t salt
  • 1 ½ cups hot water
  • ½ cup grated Parmesan cheese
  • Juice and zest of one lemon
  • Freshly ground black pepper

The green beans

  • 12 ounces green string beans
  • 2-3 tablespoons extra virgin olive oil
  • Bonus: chives and/or chive flowers for serving

Instructions

  1. Prepare the walnut sauce by crushing the walnuts, garlic, and salt together, then gradually add hot water until the sauce reaches a thick consistency.
  2. Stir in half of the Parmesan cheese, lemon juice, and black pepper, adjusting salt to taste.
  3. In a large skillet, heat olive oil over medium-high heat and add the green beans, coating them in oil and sprinkling with salt.
  4. Increase the heat to high and cook the green beans uncovered for 7-10 minutes, stirring occasionally until they blister.
  5. Transfer the cooked green beans to a serving platter and spoon the walnut sauce over them.
  6. Top with remaining walnuts, lemon zest, cheese, and chives or chive flowers if desired.
