Ingredients

The green beans

  • 12 ounces fresh green beans, trimmed

The dressing

  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, grated
  • ½ teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • 1 tablespoon fresh thyme leaves
  • 2 teaspoons extra-virgin olive oil
  • 3 tablespoons water
  • to taste freshly ground black pepper

Instructions

  1. Prepare the dressing by whisking together lemon juice, garlic, mustard, salt, and pepper in a large bowl, then stir in thyme leaves.
  2. Heat olive oil in a large skillet over medium heat, add green beans and toss to coat.
  3. Add water to the skillet, cover, and cook for about 5 minutes until the beans are tender but still crisp.
  4. Transfer the cooked beans to the bowl with the dressing and toss to coat.
  5. Season to taste and serve on a platter.
