Ingredients

  • ½ teaspoon baking soda
  • ½ teaspoon Himalayan pink salt
  • ¼ cup coconut butter
  • ½ cup date paste
  • 2 tablespoons molasses
  • teaspoons almond milk
  • teaspoons vanilla extract
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Mix ground flaxseed with water to create flax eggs and set aside.
  3. Combine oats, flours, baking soda, and salt in a bowl and set aside.
  4. In a mixer, beat together coconut butter, date paste, and molasses.
  5. Add flax eggs, almond milk, and vanilla to the mixture and combine well.
  6. Incorporate the dry ingredients into the wet mixture, adjusting milk for consistency.
  7. Fold in the vegan chocolate chips.
  8. Roll the mixture into dense balls and place on parchment-lined cookie sheets.
  9. Bake for 11-13 minutes until they begin to brown, then cool.
