Ingredients

The dough

  • cup cashews
  • ½ cup regular oats
  • 1 tbsp regular oats
  • ¾ cup whole grain spelt flour (or other flour)
  • 1 tsp kosher salt
  • 5 pieces pitted medjool dates, chopped
  • 1 tsp pure vanilla extract
  • 3-5 tbsp pure maple syrup, to taste
  • 3-4 tbsp dark chocolate, chopped

The chocolate coating

  • cup dark chocolate, melted

Instructions

  1. Line a baking sheet with parchment paper or a non-stick mat.
  2. Process the cashews and oats in a food processor until fine.
  3. Add the flour, kosher salt, and chopped dates, and process until fine.
  4. Incorporate the vanilla and maple syrup, processing until a ball forms.
  5. Stir in the chopped dark chocolate.
  6. Roll the mixture into balls and insert toothpicks.
  7. Melt the dark chocolate in a double boiler or microwave.
  8. Dip each ball halfway in the melted chocolate and place on the baking sheet.
  9. Freeze for 1 hour to set and serve immediately.
