The chocolate coating

Instructions
- Line a baking sheet with parchment paper or a non-stick mat.
- Process the cashews and oats in a food processor until fine.
- Add the flour, kosher salt, and chopped dates, and process until fine.
- Incorporate the vanilla and maple syrup, processing until a ball forms.
- Stir in the chopped dark chocolate.
- Roll the mixture into balls and insert toothpicks.
- Melt the dark chocolate in a double boiler or microwave.
- Dip each ball halfway in the melted chocolate and place on the baking sheet.
- Freeze for 1 hour to set and serve immediately.
