Healthy Mint Fudge Cookies

The cookie mixture

The chocolate coating

bar
mint chocolate or 100% cacao
Instructions
- 1. Combine nut/seed/coconut butter and honey in a mixing bowl.
- 2. Add shredded coconut and salt, then mix with an electric mixer.
- 3. Add water as needed to ensure the mixture can be shaped into cookies.
- 4. Scoop the dough, flatten it, and place it on a lined sheet.
- 5. Freeze the cookies for at least an hour.
- 6. Melt the chocolate over a double boiler and remove from heat.
- 7. Dip each frozen cookie into the melted chocolate to coat the tops.
- 8. Store the cookies in the freezer and enjoy them straight from there.
