Ingredients

The marinade

  • 2 Tbsp olive oil
  • 2 Tbsp brown sugar
  • ¼ cup balsamic vinegar
  • 1 Tbsp soy sauce
  • 2 cloves garlic, minced
  • to taste freshly cracked pepper

The main dish

  • 6 boneless, skinless chicken thighs
  • 4 oz. whole milk mozzarella
  • 2 Roma tomatoes
  • ¼ bunch fresh parsley

Instructions

  1. Prepare the marinade by mixing olive oil, brown sugar, balsamic vinegar, soy sauce, minced garlic, and cracked pepper.
  2. Place chicken thighs in a zip-top bag or dish and pour the marinade over them, ensuring they are coated. Marinate for 30 minutes to 8 hours in the refrigerator.
  3. Heat a large skillet over medium heat and add the marinated chicken thighs, cooking for about 5 minutes on each side until browned and cooked through.
  4. Remove the chicken and pour the remaining marinade into the skillet, boiling it until it reduces to a thick glaze.
  5. Lower the heat, return the chicken to the skillet, and spoon some glaze over each piece. Top with mozzarella slices and tomato slices.
  6. Cover the skillet and let it cook until the mozzarella melts. Sprinkle chopped parsley on top before serving.
