Instructions
- Prepare the marinade by mixing olive oil, brown sugar, balsamic vinegar, soy sauce, minced garlic, and cracked pepper.
- Place chicken thighs in a zip-top bag or dish and pour the marinade over them, ensuring they are coated. Marinate for 30 minutes to 8 hours in the refrigerator.
- Heat a large skillet over medium heat and add the marinated chicken thighs, cooking for about 5 minutes on each side until browned and cooked through.
- Remove the chicken and pour the remaining marinade into the skillet, boiling it until it reduces to a thick glaze.
- Lower the heat, return the chicken to the skillet, and spoon some glaze over each piece. Top with mozzarella slices and tomato slices.
- Cover the skillet and let it cook until the mozzarella melts. Sprinkle chopped parsley on top before serving.
