Ingredients

Dry Ingredients

  • 1 cup rolled oats
  • ½ cup fresh blueberries, mashed
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • a pinch salt

Wet Ingredients

  • ½ cup nonfat vanilla Greek yogurt
  • ¾ cup plain, unsweetened almond milk

Instructions

  1. Mash the blueberries in a large bowl.
  2. Add the wet ingredients and mix until smooth.
  3. Incorporate the dry ingredients and mix again.
  4. Transfer the mixture to a container and cover.
  5. Refrigerate for at least 2 hours or overnight.
  6. Serve cold, optionally adding a splash of almond milk and topping with granola, lemon zest, and fresh blueberries.
