Blueberry Overnight Oats

Ingredients

  • ½ cup blueberries
  • ½ cup gluten-free rolled oats
  • 2 tablespoons chia seeds
  • 4 teaspoons flaxseed meal
  • 1 teaspoon ground cinnamon
  • 1 cup almond milk or coconut milk
  • 2-3 tablespoons maple syrup (optional)

Instructions

  1. Combine all ingredients in a medium-sized bowl and mix well.
  2. Transfer the mixture to a jar or divide it between two jars and seal tightly.
  3. Refrigerate for at least 6 hours, ideally 12-24 hours for better digestion.
  4. When ready to eat, remove from the fridge and add extra blueberries on top.
  5. Serve cold or warm as desired.
