Guacamole Bruschetta

Ingredients

The bruschetta base

  • 1 French baguette sliced about ½ inch thick (about 20 slices)

The guacamole

  • 3 medium ripe avocados
  • ½ large onion, minced
  • 1 clove garlic, minced
  • 1 medium jalapeño, minced (stems and seeds removed)
  • ¼ cup cilantro leaves, finely chopped
  • 2 tablespoons fresh lime juice
  • ¾ teaspoon coarse salt
  • a dash freshly grated black pepper
  • 2 Roma tomatoes, chopped

Instructions

  1. Preheat the oven to 400°F and place the baguette slices on a baking sheet. Bake for 5-7 minutes until slightly golden and toasted, then let cool.
  2. Cut the avocados in half, remove the seed, and cut into chunks. Place in a bowl and add the onion, garlic, jalapeño, cilantro, lime juice, salt, and pepper. Gently stir to combine without mashing the avocado.
  3. Add the chopped tomatoes to the guacamole and stir gently.
  4. Top each baguette slice with a spoonful of guacamole and serve.
