Ingredients

Toasts

  • 1 whole wheat baguette
  • 1-2 cloves garlic

Tomato Salsa

  • 3 whole tomatoes
  • 10 pieces kalamata olives
  • 3 tbsp red onions
  • 2 tbsp fresh basil
  • 2 tbsp fresh parsley
  • 1 tsp white wine vinegar
  • 1 tsp lemon juice
  • ¼ tsp salt
  • tsp black pepper
  • to taste goat cheese crumbles

Instructions

  1. Mix all ingredients for the tomato salsa in a bowl, except for the cheese, and let it sit to macerate.
  2. Slice the baguette diagonally and toast the slices until crispy.
  3. Rub the toasted slices with a garlic clove.
  4. Top the toasts with the tomato salsa and sprinkle with goat cheese crumbles.
  5. Serve immediately.
