Ingredients

Dry Ingredients

  • 2 cups rolled oats
  • 1 cup crispy rice cereal
  • ¼ cup cocoa powder
  • ½ cup protein powder

Wet Ingredients

  • ½ cup almond butter
  • ½ cup maple syrup
  • 1 teaspoon peppermint extract
  • 1 tablespoon milk

Toppings

  • to taste chocolate chips

Instructions

  1. Line an 8x8-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the dry ingredients and mix well.
  3. In a microwave-safe bowl, combine almond butter and maple syrup, and heat until melted.
  4. Add the melted mixture to the dry ingredients along with peppermint extract, and stir until combined.
  5. If the mixture is too crumbly, add milk one tablespoon at a time until it holds together.
  6. Pour the mixture into the prepared pan and press it evenly into the pan.
  7. Top with chocolate chips and refrigerate until firm.
  8. Slice into bars once set.
