Ingredients

The bars

  • 2 cups oat flour
  • ½ cup coconut flour
  • ½ cup vanilla protein powder
  • 1 tablespoon cinnamon
  • 2 tablespoons sugar
  • ½ cup almond butter
  • ½ cup brown rice syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

The topping

  • 1 tablespoon cinnamon
  • 2 tablespoons sugar

Instructions

  1. Line an 8x8-inch baking dish with parchment paper.
  2. In a large bowl, combine the oat flour, protein powder, sugar, and cinnamon.
  3. In a microwave-safe bowl, melt the almond butter and brown rice syrup, then add the vanilla extract.
  4. Pour the wet mixture into the dry ingredients and mix until crumbly.
  5. Add milk one tablespoon at a time until a thick batter forms.
  6. Transfer the mixture to the baking dish and press firmly, then sprinkle the cinnamon topping on top.
  7. Refrigerate for at least 30 minutes before slicing into bars.
